Preheat oven to 350° F.
Unroll the piecrust and line a 9" pie dish with one crust - set aside.
In a non-stick skillet, crumble and cook the sausage until no longer pink.
Add the onion, green pepper and green chile to the skillet and cook for another minute.
Drain excess fat from the cooked sausage mixture.
Spread 1/2 of the sausage mixture in the pie crust and sprinkle with 1/2 the cheese.
Spread the remaining sausage mixture over the cheese.
In a medium bowl whisk together the milk, eggs, salt, and pepper.
Pour the egg mixture evenly over the sausage and sprinkle the top with the remaining cheese.
Bake the quiche in the oven for 40 minutes at 350°.
Remove from oven and let the quiche rest for 10 minutes before serving.
