Sausage and Cheese Quiche with Green Chile

A perfect breakfast quiche made with tasty sausage, cheddar and green chile

Ingredients
  

  • 1 Refridgerated Pie Crust (at room temperature)
  • 8 oz Breakfast Sausage (mild or spicy)
  • cup Onion (diced small)
  • cup Green Pepper (diced small)
  • 4 oz Chopped Green Chile (canned)
  • 2 cups Sharpe Cheddar Cheese (shredded and divided)
  • 6 Eggs (large)
  • 3 tbsp Milk
  • ½ tsp Salt
  • ½ tsp Black Pepper

Instructions
 

  • Preheat oven to 350° F.
  • Unroll the piecrust and line a 9" pie dish with one crust - set aside.
  • In a non-stick skillet, crumble and cook the sausage until no longer pink.
  • Add the onion, green pepper and green chile to the skillet and cook for another minute.
  • Drain excess fat from the cooked sausage mixture.
  • Spread 1/2 of the sausage mixture in the pie crust and sprinkle with 1/2 the cheese.
  • Spread the remaining sausage mixture over the cheese.
  • In a medium bowl whisk together the milk, eggs, salt, and pepper.
  • Pour the egg mixture evenly over the sausage and sprinkle the top with the remaining cheese.
  • Bake the quiche in the oven for 40 minutes at 350°.
  • Remove from oven and let the quiche rest for 10 minutes before serving.
