Quiche is an amazing dish that seems fancy and complicated but is actually super easy to make. There are so many different versions that you can have it for breakfast, lunch, or dinner.
A quiche is a dish made with a buttery, flakey, crust and filled with a savory egg filling that is usually combined with a variety of meats, cheeses and vegetables. It is very filling and keeps my hungry family full well past the next meal.
Holiday mornings are always the best days to have a family breakfast feast. I love to wake up early before the house stirs and prepare our family’s holiday breakfast. And a delicious breakfast quiche is usually our main dish. We love it with bacon, sausage, or ham and lots of cheese. I also like to add a few veggies to the mix to give it extra flavor. Since Easter Sunday is coming up, I wanted to share our family’s favorite breakfast quiche; sausage, cheese and green chili.


Sausage and Cheese Quiche with Green Chile
Ingredients
- 1 Refridgerated Pie Crust (at room temperature)
- 8 oz Breakfast Sausage (mild or spicy)
- ⅛ cup Onion (diced small)
- ⅛ cup Green Pepper (diced small)
- 4 oz Chopped Green Chile (canned)
- 2 cups Sharpe Cheddar Cheese (shredded and divided)
- 6 Eggs (large)
- 3 tbsp Milk
- ½ tsp Salt
- ½ tsp Black Pepper
Instructions
- Preheat oven to 350° F.
- Unroll the piecrust and line a 9" pie dish with one crust – set aside.
- In a non-stick skillet, crumble and cook the sausage until no longer pink.
- Add the onion, green pepper and green chile to the skillet and cook for another minute.
- Drain excess fat from the cooked sausage mixture.
- Spread 1/2 of the sausage mixture in the pie crust and sprinkle with 1/2 the cheese.
- Spread the remaining sausage mixture over the cheese.
- In a medium bowl whisk together the milk, eggs, salt, and pepper.
- Pour the egg mixture evenly over the sausage and sprinkle the top with the remaining cheese.
- Bake the quiche in the oven for 40 minutes at 350°.
- Remove from oven and let the quiche rest for 10 minutes before serving.
