Potato Soup Homemade in 30 Minutes

Potato Soup is a favorite dish that is so easy to make. It is a perfect combination of a creamy, buttery baked potato all steaming hot served in a bowl. Every time I make potato soup, my memory floods back to my beloved Grandma Marie and the summers I spent on her small farm in Montrose, Colorado.

As I slice and dice the potatoes for the soup, I remember all the adventures my sister and I had at Grandma’s. We learned so many things such as how to pluck a chicken (I might have cried silently learning this task). We learned to pick apples, apricots and raspberries. I believe more raspberries went in my tummy than in the basket! We loved to watch Grandma Marie in her wood shop, she would make the most amazing crafts. She was so talented at building things. Every day on the farm was filled to the brim with fun things; riding the tractors, collecting eggs, climbing trees, playing hide and seek and so much more.

At the end of every hard day of playing, Grandma would prepare dinner. The good wholesome, fresh farm, homestyle cooking, the kind only served at your grandma’s. One of my favorite meals she would make was potato soup. The creamy, yet a little bit chunky, so buttery soothing taste of a baked potato that you eat with a spoon! So, in honor of my Grandma Marie – I am sharing my favorite potato soup recipe. Hoping it will bring up memories of the “good ol’ days” for you and your family as well. Enjoy!

Easy Homemade Potato Soup

Easy Homemade Potato Soup in 30 minutes

Ingredients
  

  • 5 medium Russet Potatoes Peeled and cut in 1 inch chunks
  • 1 can Chicken Broth
  • 1 medium Carrot Diced small
  • 1 medium Celery Diced small
  • ¼ medium Green Pepper Diced small
  • ¼ cup Milk
  • ¼ cup Sour Cream
  • ½ cup Shredded Cheddar Cheese Mild, Medium or Sharpe
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Salt add more to taste
  • 1 tsp Black Pepper

Instructions
 

  • Bring chicken broth, potatoes, carrots, bell pepper, celery to a boil in a 2 qt sauce pan.
  • Add garlic powder, onion powder, salt and pepper.
  • Continue boiling until potates are soft enough to mash.
  • Mash 1/2 of the potatoes with a potato masher, making sure to leave plenty of chunks.
  • Reduce heat and add milk, sour cream and cheese.
  • Continue cooking over low to medium heat until desired thickness and texture is reached, approximately 10 minutes.
  • Serve immediatelty and enjoy delicious homemade comforting potato soup in 30 minutes!
  • Top with your favorite toppings such as cooked bacon, chives, shredded cheese. Serves 4
